Our Chilli & Ginger Chicken With Miso Broth Rice is the ultimate comfort dish - October’s here, kids are back at school, life's busy, and colds are back in full force. No one has time to spend hours on a weekday meal, but we all want comforting, nutritious food that feels like a hug in a bowl. This brothy rice is the ultimate quick fix that nourishes your soul and your body in under 30 minutes.
Our top tips for a speedy weeknight meal that packs a punch:

Keep chopped frozen herbs in the freezer. You can either do this yourselves or buy from most supermarkets

Itsu miso easy pouches are a lifesaver. Pop one of these sachets in some chicken stock and you instantly have a delicious broth that feeds your gut microbiome and your soul
Ingredients (for 2)
For the chicken
- 2 chicken breasts
- 1 tsp chopped chilli
- 1 tsp chopped garlic
- 1 tsp ginger puree
- 1 tsp sesame oil
- Juice of 1 lime
For the miso broth rice
- 1 sachet of Itsu Miso Easy
- 1 chicken stock cube
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp chopped chilli
- 1 tsp chopped garlic
- Handful of chopped coriander (plus extra to serve)
- 1 packet of microwave rice (we used Tilda Lime & Coriander)
- 1 carrot (prepped into ribbons)
- 1 large handful spinach
- 1 red pepper (cut into thin strips)
Method
- Pre-heat your oven to 200 degrees celsius
- For the chicken: mix together the chilli, garlic, ginger puree, sesame oil and lime, and distribute evenly over the chicken breasts. Bake in the oven for 30 mins
- While the chicken is in the oven, turn your attention to the best bit! In a pan, heat your sesame oil and fry the garlic and chilli until slightly softened (approx. 1 min)
- Add in the miso sachet and chicken stock, followed by all the veg. Pop in the soy sauce, fish sauce and coriander, and leave to get tasty in the pot while the chicken cooks.
- Remove your chicken from the oven once cooked and set aside to cool for a minute.
- Put the rice in the microwave for 2 minutes and, while it's in there, slice your chicken breasts into even horizontal strips.
- Once the rice is hot, split between the bowls, ladle over the broth and then put your chicken on top.
- Sprinkle some more coriander on top and voila!
