Thai Green Cod Recipe

As we step into the New Year, a minimal effort, maximum reward sort of dish is exactly what’s in order.

Our latest seasonal recipe featuring cod, a rich source of omega-3 fatty acids, is paired with a variety of vegetables and herbs that nourish your gut microbiome. These ingredients work together to support immune function, enhance fibre and protein digestion, and promote the synthesis of key vitamins.

Ingredients (serves 2)

- 2 cod fillets

- 1 packet pre-cooked rice

- A handful of coriander

- 1 clove garlic

- 1 thumb size ginger piece

- 1 tbsp fish sauce

- 2 tbsp green Thai paste

- 1/2 can coconut milk

- 1 red pepper

- 1 pack tenderstem broccoli

- 1 spring onion

- 1 lime

Method

Empty the rice into an oven proof dish

Pop the sliced red pepper & broccoli on top of the rice, and then the cod on the top

Blitz up the garlic, ginger, coriander, fish sauce, Thai paste, coconut milk & lime in a blender and pour over the other ingredients in the dish

Cover with tin foil & cook in the oven for 30mins at 180 degrees

Chop up some spring onions & scatter on the top

- Serve up and enjoy!

How does this benefit the body?

Cod - source of omega-3 fatty acids, an essential fat for metabolic function, but one that the body cannot produce on its own. Several studies have found that omega 3s reduce the level of triglycerides in the blood, therefore reducing the risk of heart disease. Omega 3s also have incredible anti-inflammatory properties.
