Smashed peas, with zesty lemon, on toast

Say goodbye to avocado fatigue—our latest seasonal recipe is a fresh take on toast that’s perfect for summer. Smashed peas with zesty lemon, topped with silky smoked salmon or a soft-boiled egg, make an energising breakfast or a light, satisfying lunch that feels as good as it tastes.

Ingredients (for 1)

  • 50g peas
  • 50g cottage cheese (5g protein!)
  • 5g grated Parmesan
  • 1 spring onion
  • Handful of basil
  • Juice of half a lemon
  • A slice or two of your favourite bread 
  • Your preferred topping e.g. smoked salmon or a soft-boiled egg

Method

- Once you’ve gathered and measured all the ingredients, pop them in a blender and blitz until your desired consistency.

- Then spread on some toast and top with whatever your heart desires (we like some omega-3 rich smoked salmon).

This breakfast gave me 26g of protein and 7g of fibre, so kept me full and productive.

- Helps support your gut microbiome. Fibre is digested in your colon, rather than your stomach. This means it feeds the “good” bacteria in the gut when digested.

- Helps you feel fuller for longer, so if weight loss is your goal, it can be really helpful to focus on a fibre rich diet.

- Balances cholesterol levels.

- Prevents blood sugar spikes by slowing down the rate at which soluble glucose is absorbed into the bloodstream. If your focus is energy levels, this is great as it keeps helps to keep energy levels more stable throughout the day.
